WINEMAKER’S GUIDE

WINEMAKING

The grapes are harvested at optimal ripeness at dawn to preserve aromatic balance and prevent oxidation. After destemming, a short skin maceration is carried out, followed by pneumatic pressing. The juices are then cold-settled for 2 to 4 weeks with regular stirring to enhance aromatic potential. This is followed by settling and low-temperature fermentation to preserve the finesse of the aromas. Ageing on fine lees brings roundness and complexity to the wine.

WINE AND FOOD PAIRING

Fresh and aromatic, this Sauvignon Blanc is ideal with sushi, white fish, seafood, and a variety of fresh cheeses. Serve between 8 and 10°C.
