WINEMAKING
The grapes are harvested at optimal ripeness at dawn to preserve aromatic balance and prevent oxidation.
After destemming, a short skin maceration is carried out, followed by pneumatic pressing. The juices are then cold-settled for 2 to 4 weeks with regular stirring to enhance aromatic potential. This is followed by settling and low-temperature fermentation to preserve the finesse of the aromas. Ageing on fine lees brings roundness and complexity to the wine.
WINE AND FOOD PAIRING
Generous and structured, this Chardonnay is ideal with foie gras, roasted poultry, fish with beurre blanc sauce, aged cheeses, and dried fruit desserts. Serve between 10 and 12°C.
