IGP PAYS D’OC MERLOT
This wine comes from a land full of history. It is produced in the Southern French Languedoc-Roussillon, over four departments along the Mediterranean coast. Here, the northern mountains of the Pyrenees and the Cevennes embrace the vineyards of the Pays d’Oc like an amphitheater. Thanks to a heritage of over 2600 years of winemaking traditions and a patchwork of climates, reliefs and soils, this region is home to a diversity of extraordinary wines.
This premium Merlot comes from terroirs located on the East part of the Pays d’Oc, where soils are made of silt and clay. The selected vineyards blocks are planted on plains bordering the Canal du Midi. This location is very well adapted to the Merlot varietal, as it needs regular watering and fresh nights to express itself at its best. Silt and clay tend to retain and provide enough water during the summer period, while the Mediterranean climate provides enough sunlight to reach full ripeness.

WINEMAKER'S NOTE
Dark ruby red, the Merlot displays lovely chassis and raspberry flavors to the nose. The mouth will be slightly spicy with oaky notes and full of fruit. The lingering finish will offer peppery notes.
WINEMAKING
A small part of the crop goes through hot skin contact maceration to support the fruity aromas. Most of the grapes are destemmed and sent through a traditional maceration and fermentation process for about three weeks. This long process is ideal to extract the variety’s specific character and get a good structure with supple tannins. About 30% of the blend is aged in contact with French oak staves, adding complexity to the blend.
