IGP PAYS D’OC CABERNET SAUVIGNON
The Pays d’Oc benefits from the Mediterranean climate. With its coastline bordering the region in the South, it provides hot and dry summers for perfect maturity. On the other side, the Black Mountain brings enough humidity and cool temperatures for the vineyards to produce grapes packed with fruity aromas. The terroir effect is very noticeable in this region due to the great variety of winegrowing areas that create an expression of the grape varieties that is unique.
This specific Cabernet Sauvignon comes from terroirs stretching all the way along the piedmont of the Black Mountain. This warm and dry Mediterranean sector, where the vines meet the garrigue (scrubland), is tempered by the refreshing breezes coming from the Mountains. The vines are planted on well exposed stony terraces, made of sandstone and limestone sub-soil. Cabernets from this are concentrated, complex and characterized by aromas of ripe fruit.

WINEMAKER'S NOTE
Deep and intense ruby in the glass. Multi-layered, with ripe blackcurrant, plum sauce, and blackberry notes. Slightly oaked. The palate is very smooth and generous, with a slight acidity from the tannins. Light coffee notes in the finish.
WINEMAKING
As they arrive in the cellar, the grapes are destemmed and crushed before they are sent to macerate for two weeks in a concrete tank. This long process is ideal to extract the fruity character of the variety. 30% of the juice is aged under the influence of half-toasted French oak, adding complexity to the resulting wine.

Enjoy this wine at room temperature, with smoked meat, duck breast, pasta alla Norma.
